Sweet Potato Mac and Cheese

Wise Ingredients

 

Sweet Potato "Cheese" Sauce

  • 1½ cups roasted or cooked sweet potato (about 2 potatoes)

  • ¼ cup nutritional yeast

  • ½ cup + 2 tbsp almond or other non-dairy milk

  • ¼ cup tahini 

  • ¼ cup lemon juice

  • ½ tsp smoked paprika

  • 1 tsp salt

 

The Rest

  • ½ peeled yellow onion

  • 1 tbsp olive oil (optional)

  • 2 cups spinach (optional)

  • 1 box whole wheat penne (or whatever pasta you like)

Instructions

  1. Preheat oven to 425F.  

  2. Poke holes in sweet potatoes and microwave for 15 minutes. 

  3. Brush the onion half with olive oil, and wrap in foil. (You can bake without olive oil if you're oil-free). Bake onion and microwaved sweet potato for 25-30 mins. 

  4. Meanwhile, prepare pasta according to package directions. Drain pasta and set aside.

  5. Blend all ingredients for sweet potato "cheese" sauce, along with roasted onion in a high speed blender until smooth. If sauce is too thick, you can add more non-dairy milk 1 tbsp at a time until you reach the desired consistency.

  6. Mix pasta, sauce and spinach in large pot, heat and stir over medium-high heat until spinach is soft. Enjoy!

Wise Tips: 

You could add roasted garlic, hot sauce or breadcrumbs to add some extra flair.
