I’m just over three weeks into my vegan odyssey and I have to say, I’m impressed!
Here’s what I’ve learned so far:
Who knew?? Apparently lots of people, but I was just not buying it. But, since I cut animal products out of my diet, my pain levels have gone way, way down. For the first time in 24 years I had to check in with my body and ask, “Do I feel pain?” And the answer was “No, no, not really”. If this lasts, my life will truly never be the same.
I had visions of turning vegan and choking down carrot and celery stalks for survival, never enjoying food again, but wow, have I eaten well in the last three weeks! In addition to the many healthy and delicious meals we’ve made, I’ve had vegan queso, ice cream, chocolate mousse cake, and guys – there’s vegan Ranch! I haven’t felt deprived even once, and I haven’t craved meat or dairy at all. So far - so good.
I traveled for the first time as a vegan last week, and vegan airport food is limited, so plan ahead. The choices are basically nuts, hummus, fruit or sugar filled smoothies. Thankfully I had packed some snacks, but those days of travel were not the best nutritionally. I do want to give a shout out to the Dos Coyotes in the Sacramento Airport though. I got a side of black beans, a side of rice and a side of guacamole for $3.98!! I was so stunned I forgot to buy my $5.00 water.
I’m still on all my meds, and I still feel the need to sleep part of each day. My medical team has taken me from a liver disease scare to a cancer scare over the past 2 weeks, but still no diagnosis. (I do get to go back every 6 months for the next two years for testing however) But, overall I have a feeling of added energy – like a little zing that wasn’t there before, and I do feel a better quality of life in general. It’s one of those things you can’t fully explain, but you know it’s there.
